Ingredients

  • 3-4 lbs yukon / yellow / gold potatoes

Seasonings

  • 6 tbsp olive oil
  • 3 tbsp butter
  • 1 tsp thyme
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 tsp black pepper

Optional Seasonings

  • minced garlic, bell peppers, onions, parsley, red pepper flakes, garlic butter.

Instructions

  • Diced yellow potatoes, rinse and pat dry.
  • In a bowl, add the potatoes along with 3 tbsp of olive oil, thyme, garlic powder, onion powder, chili powder, salt and black pepper. Mix well allowing all the seasonings to coat the potatoes.
  • On medium-heat add remaining olive oil and butter to a cast iron or non-stick skillet. Once hot add the potatoes. Cook for about 5 minutes.
  • Turn the heat down to medium-low and cover the skillet. Cook for about 10 minutes.
  • Uncover the potatoes and stir well to prevent burning. You'll want a nice brown coating.
  • At this point, you can add optional items - minced garlic, bell peppers, and/or onions. Mix well, and re-cover pan, simmer again on medium-low for about 10 minutes.
  • Remove cover, and check that the potatoes are done by sticking with a fork.
  • Taste the potatoes and add salt and pepper if necessary.
  • Optionally, you can add garlic butter (but be careful of the amount of salt previously added). You can also add parsley and red pepper flakes.
