Instructions
Diced yellow potatoes, rinse and pat dry.
In a bowl, add the potatoes along with 3 tbsp of olive oil, thyme, garlic powder, onion powder, chili powder, salt and black pepper. Mix well allowing all the seasonings to coat the potatoes.
On medium-heat add remaining olive oil and butter to a cast iron or non-stick skillet. Once hot add the potatoes. Cook for about 5 minutes.
Turn the heat down to medium-low and cover the skillet. Cook for about 10 minutes.
Uncover the potatoes and stir well to prevent burning. You'll want a nice brown coating.
At this point, you can add optional items - minced garlic, bell peppers, and/or onions. Mix well, and re-cover pan, simmer again on medium-low for about 10 minutes.
Remove cover, and check that the potatoes are done by sticking with a fork.
Taste the potatoes and add salt and pepper if necessary.
Optionally, you can add garlic butter (but be careful of the amount of salt previously added). You can also add parsley and red pepper flakes.
