Ingredients
- 4-6 1/2 inch thick pork chops
- 3 tbsp butter
- 2 tbsp olive oil
Seasoning Rub (sprinkle a little of each - no exact measurement)
- olive oil
- seasoning salt
- curry powder (salt-free)
- dried thyme leaves
- black pepper
- paprika
Curry Sauce
- 1/2 medium onion (sliced)
- 1 tbsp minced garlic
- 1 tsp chicken bouillon
- 1½ tsp curry powder
- 1½ tsp brown sugar
- 1 tsp corn starch
- 1 cup water
- ¼ cup apple juice
- 1 cup heavy cream
Instructions
Prep Pork Chops
- Rinse pork chops and pat dry. Place on a cookie sheet.
- Drizzle olive oil on both sides of the pork chops. Sprinkle seasonings: seasoning salt, curry powder, thyme, black pepper and paprika.
- On medium heat, using a large skillet, add butter and olive oil.
- You'll cook the pork chops in batches. Place 2 pork chops in the skillet and cook for approximately 6-7 minutes on each side. Place the pork chops on a plate and set aside. Repeat for the next batch. Please note: the pork chops won't be completely done.
Curry Sauce
- Using the same skillet, add sliced onions and minced garlic. Mix in curry, chicken bouillon, brown sugar and corn starch.
- Using a whisk, stir in water, apple juice, and heavy cream.
- Add the pork chops back into the pan and cover with a top.
- Turn heat to medium-low and cook for 20 minutes.
- Garnish with parsley or cilantro.
