Ingredients

  • 4-6 1/2 inch thick pork chops
  • 3 tbsp butter
  • 2 tbsp olive oil

Seasoning Rub (sprinkle a little of each - no exact measurement)

  • olive oil
  • seasoning salt
  • curry powder (salt-free)
  • dried thyme leaves
  • black pepper
  • paprika

Curry Sauce

  • 1/2 medium onion (sliced)
  • 1 tbsp minced garlic
  • 1 tsp chicken bouillon
  • tsp curry powder
  • tsp brown sugar
  • 1 tsp corn starch
  • 1 cup water
  • ¼ cup apple juice
  • 1 cup heavy cream

Instructions

Prep Pork Chops

  • Rinse pork chops and pat dry. Place on a cookie sheet.
  • Drizzle olive oil on both sides of the pork chops. Sprinkle seasonings: seasoning salt, curry powder, thyme, black pepper and paprika.
  • On medium heat, using a large skillet, add butter and olive oil.
  • You'll cook the pork chops in batches. Place 2 pork chops in the skillet and cook for approximately 6-7 minutes on each side. Place the pork chops on a plate and set aside. Repeat for the next batch. Please note: the pork chops won't be completely done.

Curry Sauce

  • Using the same skillet, add sliced onions and minced garlic. Mix in curry, chicken bouillon, brown sugar and corn starch.
  • Using a whisk, stir in water, apple juice, and heavy cream.
  • Add the pork chops back into the pan and cover with a top.
  • Turn heat to medium-low and cook for 20 minutes.
  • Garnish with parsley or cilantro.
