Oven BBQ Ribs with Oklahoma Joe’s Rib Rub

I’ve been using the recipe for Oklahoma Joe’s rib rub for a long time.  The first time I learned of the Oklahoma Joe’s restaurant (now Joe’s Kansas City Bar-B-Que), I was watching the Travel Channel, and the tv host Adam Richman was visiting.  Once my eldest child went to college in Kansas City, the restaurant was one of my first stops! The bbq, sauces and sides were all fabulous. 

I found the Oklahoma Joe’s rib rub recipe online years ago, and recently I decided to add it to my own website so that I don’t have to search for it online.

Ingredients

Rib Rub

  • 2 tbsp granulated sugar
  • 1 tbsp packed brown sugar
  • 1 ½ tsp garlic powder
  • 1 ½ tsp chili powder
  • 1 ½ tsp smoked paprika
  • 1 ½ tsp ground cumin
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp white pepper
  • 1 tsp ground black pepper

Assemble Ribs

  • 2 racks baby back ribs
  • 1/4 cup yellow mustard
  • 2 cups apple juice

Instructions

Rib Rub Recipe

  • In a small bowl, combine granulated sugar, brown sugar, garlic powder, chili powder, paprika, cumin, salt, onion powder, white pepper and black pepper.
  • Store in a covered container at room temperature.

BBQ Ribs on the Grill

  • Barbecue the ribs using the indirect method. Charcoal on one side of the grill, add 2 cups of apple juice to a drip pan on the other side. Add the rack of ribs above the drip pan.
  • Close the grill and cook for 2.5 to 3 hours at 325°F - 350℉.

Oven Baked Ribs

  • Preheat oven to 325°F - 350℉.
  • Using a butter knife, remove membrane from the back of ribs. Rinse ribs with cold water and pat dry.
  • Rub yellow mustard on ribs and sprinkle both sides with Oklahoma Joe's Rib Rub. Add aluminum foil to baking dish and place ribs on top. Pour in 1-2 cups of apple juice underneath ribs, being careful not to wash off seasoning.
    Wrap the ribs with the aluminum foil. Bake in the oven for 1.5 hours.
  • Remove ribs from the oven and turn the heat to 400℉. Pour the remaining apple juice from the pan on top of the ribs. Add your favorite bbq sauce and bake uncovered for 20-25 minutes.
