- 1 cookie sheet
- 1 immersion blender
Ingredients
Chicken Wings
- 24 chicken wings (split – flats and drummettes)
- olive oil
- Mango Chipotle seasoning
- Mango Pepper
- Cajun Seasoning
- ¼ cup corn starch
Mango Chipotle Sauce
- 3 cups frozen mangos
- 2 tbsp butter (salted)
- 1 large lemon
- 1 cup honey
- 1¼ cup water
- 1 tsp mango chipotle seasoning
- 1 tsp mango pepper
- 1 tsp salt
- 1 tsp crush red pepper flakes
- parsley / sesame seeds (optional)
Instructions
Chicken Wings
- Preheat oven to 400℉.
- Rinse chicken wings and pat dry. Add to a bowl and add olive oil.
- Add seasonings liberally – cajun seasonings, mango chipotle seasoning and mango pepper. Next add corn starch. Mix well.
- Line cooking racks with aluminum foil. Spray cooking racks with nonstick spray. Add chicken wings on cookie racks – without overcrowding.
- Bake uncovered at 400℉ for 45 minutes. Turn over chicken wings and cook for another 25 minutes. Take out the oven and set to the side.
Mango Chipotle Sauce
- While the chicken wings are baking, begin making the sauce. On medium heat add frozen mangos to a large sauce pan.
- Next add butter, lemon juice, honey, mango chipotle seasoning, mango pepper, and water. Stir and simmer on medium-low for 20 minutes.
- Using a blender, puree the mixture until it becomes a sauce. Mix the sauce over the wings. Add to a separate cookie sheet lined with aluminum foil, and bake at 425℉ for 10 minutes to allow the sauce to become carmelized and sticky.
- Remove chicken from the pan and top with parsley and sesame seeds as a garnish (optional).
