Rinse chicken wings and pat dry. Add to a bowl and add olive oil.
Add seasonings liberally - cajun seasonings, mango chipotle seasoning and mango pepper. Next add corn starch. Mix well.
Line cooking racks with aluminum foil. Spray cooking racks with nonstick spray. Add chicken wings on cookie racks - without overcrowding.
Bake uncovered at 400℉ for 45 minutes. Turn over chicken wings and cook for another 25 minutes. Take out the oven and set to the side.
Mango Chipotle Sauce
While the chicken wings are baking, begin making the sauce. On medium heat add frozen mangos to a large sauce pan.
Next add butter, lemon juice, honey, mango chipotle seasoning, mango pepper, and water. Stir and simmer on medium-low for 20 minutes.
Using a blender, puree the mixture until it becomes a sauce. Mix the sauce over the wings. Add to a separate cookie sheet lined with aluminum foil, and bake at 425℉ for 10 minutes to allow the sauce to become carmelized and sticky.
Remove chicken from the pan and top with parsley and sesame seeds as a garnish (optional).
