Ingredients
- 12 chicken tenderloins
- 1 tsp ground cumin
- 1 tbsp McCormick Sunshine by Tabitha Brown
- 1 10 oz can Rotel (Original) diced tomatoes with green chilies
- 1 jar Margie's Mango Herb and Garlic Marinade/Basting Sauce
- 4 tbsp olive oil
Instructions
- Dice chicken tenderloins in large chunks. Rinse and pat dry.
- In a large bowl, add chicken, olive oil, ground cumin and Sunshine seasoning and mix.
- On medium heat, add chicken mixture to a large skillet. Cover skillet and cook for 10 minutes.
- Stir in Rotel tomatoes and cover. Cook for 40 minutes or until extra liquid is almost evaporated.
- Stir in Margie's Mango Herb and Garlic Marinade and Basting Sauce. and cover again. Cover and cook for 10 minutes.
- Heat tortillas and add your favorite taco toppings.
