Chicken Wings

  • Preheat the oven to 400℉.
  • Rinse chicken wings in cold water and pat dry.
  • Place chicken wings in a bowl and drizzle with olive oil.
  • Sprinkle generously both seasonings on the chicken wings - Spanglish Asadero Pollo Asado and Elote.
  • Spray a baking rack with nonstick spray and add chicken wings. Bake (uncovered) for 40 minutes. Turn over and bake for an additional 30 minutes.

Elote Sauce

  • In a medium bowl, add mayonnaise, cremosa, lime juice, elote, 1 tbsp chili powder seasonings and cilantro seasoning. Mix well.
  • Once the chicken wings are cooked, add them to a large bowl and pour the elote sauce over the wings. Mix well.
  • Place the chicken wings on a platter and sprinkle cotija cheese and remaining chili powder. Top with additional cilantro or parsley.
