Ingredients

  • 1 1/2 lbs frozen chopped spinach
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 tbsp minced garlic
  • 1 1/2 cup milk (2% or whole)
  • 1/2 cup heavy whipping cream
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4 cup parmesan cheese
  • crushed red pepper flakes (optional)

Instructions

  • Using a quart size pot, add 1/2 inch of water to boil.
  • Add spinach and cook until it's wilted. About 3 mins.
  • Drain the spinach in a strainer. Using a large cooking spoon, pat down and squeeze out the rest of the water.
  • In a large skillet, melt butter and add flour. Whisk and add minced garlic.
  • Whisk in salt, black pepper, onion powder, and nutmeg.
  • Whisk in milk and heavy whipping cream. Cook until mixture is thickened.
  • Stir in spinach and parmesan cheese.
  • Garnish with more parmesan cheese and crushed red pepper flakes.
