Ingredients
- 1 1/2 lbs frozen chopped spinach
- 2 tbsp butter
- 1 tbsp flour
- 1 tbsp minced garlic
- 1 1/2 cup milk (2% or whole)
- 1/2 cup heavy whipping cream
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/4 cup parmesan cheese
- crushed red pepper flakes (optional)
Instructions
- Using a quart size pot, add 1/2 inch of water to boil.
- Add spinach and cook until it's wilted. About 3 mins.
- Drain the spinach in a strainer. Using a large cooking spoon, pat down and squeeze out the rest of the water.
- In a large skillet, melt butter and add flour. Whisk and add minced garlic.
- Whisk in salt, black pepper, onion powder, and nutmeg.
- Whisk in milk and heavy whipping cream. Cook until mixture is thickened.
- Stir in spinach and parmesan cheese.
- Garnish with more parmesan cheese and crushed red pepper flakes.
