Ingredients

  • 3 lbs red potatoes
  • 8 oz fresh baby spinach
  • olive oil
  • 2 tbsp butter
  • 2 tbsp minced garlic
  • black pepper
  • seasoning salt
  • thyme
  • paprika
  • garlic powder
  • onion powder
  • parmesan cheese
  • red pepper flakes
  • Naija Grille Spice Mix Seasoning 

Instructions

  • Slice the red potatoes and rinse off in a large colander.
  • in a bowl add the potatoes and sprinkle on the following seasonings: black pepper, seasoning salt, thyme, paprika, garlic powder, and onion powder. Mix well.
  • On medium-heat, in a skillet add butter and olive oil.
  • Pour potatoes into the pan and cover with a top. Cook for 15 minutes. Every 5 minutes, stir to ensure the potatoes aren't burning.
  • Next add 2 handfuls of baby spinach or about 8 ounces of spinach. Season with Naija Grille Seasoning. Stir well and cover with top. Cook on medium-low for 5-7 minutes.
  • Top with parmesan cheese and red pepper flakes.
