Ingredients
- 3 lbs red potatoes
- 8 oz fresh baby spinach
- olive oil
- 2 tbsp butter
- 2 tbsp minced garlic
- black pepper
- seasoning salt
- thyme
- paprika
- garlic powder
- onion powder
- parmesan cheese
- red pepper flakes
- Naija Grille Spice Mix Seasoning
Instructions
- Slice the red potatoes and rinse off in a large colander.
- in a bowl add the potatoes and sprinkle on the following seasonings: black pepper, seasoning salt, thyme, paprika, garlic powder, and onion powder. Mix well.
- On medium-heat, in a skillet add butter and olive oil.
- Pour potatoes into the pan and cover with a top. Cook for 15 minutes. Every 5 minutes, stir to ensure the potatoes aren't burning.
- Next add 2 handfuls of baby spinach or about 8 ounces of spinach. Season with Naija Grille Seasoning. Stir well and cover with top. Cook on medium-low for 5-7 minutes.
- Top with parmesan cheese and red pepper flakes.
