Slice the red potatoes and rinse off in a large colander.

On medium-heat, in a skillet add butter and olive oil.
Pour potatoes into the pan and cover with a top. Cook for 15 minutes. Every 5 minutes, stir to ensure the potatoes aren't burning.
Next add 2 handfuls of baby spinach or about 8 ounces of spinach. Season with Naija Grille Seasoning. Stir well and cover with top. Cook on medium-low for 5-7 minutes.
