On medium-heat, in a skillet, add butter, brown sugar and cinnamon and cook until well-incorporated. Stir in apples. Stir in apple whiskey. Reduce heat to simmer for 8 minutes. Remove from heat and set aside.
French Toast
Slice loaf of brioche bread (if not pre-sliced).
In a bowl, add eggs, milk, heavy whipping cream, cinnamon, and apple whiskey. Mix well.
On medium-low heat, in a large skillet, add 2 tablespoons of butter and 1 tbsp of olive oil.
Submerge bread into batter mixture so that both sides are covered. Place 2 slices of the bread in the skillet and cook for 2 minutes on each side. If necessary flip again until the bread is golden brown. Repeat steps until all bread slices are cooked.
On a plate, add french toast and top with apple mixture. Sprinkle with cinnamon and powdered sugar (optional)
