Using a cookie sheet, place pork chops and cover each side with olive oil and Island BBQ seasoning. Let rest for 10 mins.
On medium heat, using a large pan, place 2-3 pork chops and sear for 5 mins on each side. Place them in a baking pan. Repeat steps for the remaining pork chops.
Pour drippings from the pan into the baking dish.
Using your favorite BBQ sauce, baste it on each side of the pork chops.
Place the pork chops in the oven and bake until they're cooked through.Cooking time will vary depending on the thickness of your pork chops, so I recommend checking the internal temperature instead of relying only on the clock. Mine cooked for 40 minutes.Pork should reach a safe internal temperature of 145°F, followed by at least a three-minute rest before serving.
For an extra saucy finish, brush additional BBQ sauce over the pork chops toward the end of the cooking time.You can return them to the oven briefly to allow the sauce to thicken and caramelize on the meat.
